Winter Minestrone Soup
This soup is so full of healthy vegetables it is like a multivitamin in a bowl!
Ingredients
• 1 Onion, Chopped
• 2 Carrots, Peeled & Chopped
• 2 Cloves of Garlic, Minced
Bean & Swiss Chard Soup
This Soup is excellent reheated. If you are making it in advance, put the pasta in only when you reheat it, or else it will become gluey.

Zucchini sticks are tossed with light panko breadcrumbs and then baked in the oven. Try these healthy “fries” dipped in creamy Greek yogurt seasoned with parsley and lemon. This recipe comes from Elizabeth of Sophisticated Pie.
